Watermelon Shaped Rice Krispies Treats

I saw a picture of these treats on Pinterest and thought they were too adorable not to make. With Fourth of July coming up these would be a great treat to bring to your holiday picnic or BBQ. I let my boyfriend take the batch we made to his co workers because really who doesn't like rice krispies!

Final Product, very yummy!


Ingredients:

For the Rind:
  • 1 tablespoon butter
  • 1/3 of a package of Big Marshmallows (about 15)
  • 2 cups Rice Krispies cereal
  • 2 drops green food coloring
For the Middle:
  • 2 tablespoon butter
  • 2/3 of a package of Big Marshmallows (about 30)
  • 4 cups Rice Krispies cereal
  • 2 drops pink food coloring


Directions:

1) Spray a cake pan with cooking spray. You will start by making the rind first.
2) On the stove top, place the butter and marshmallows for the rind and let them melt. Remember to stir the ingredients so that they don't stick to your pot. Once the ingredients have melted put in your green food coloring and stir.
3) Take your pot of the stove and mix in your cereal. Stir the ingredients together until they are well combined.
4) Next place the green cereal mixture into your cake pan and shape it into the rind of the watermelon, leaving the middle of your cake pan empty.
5) Now we are going to repeat the above steps for the meat of the watermelon.
6)  Once you have melted and combined your ingredients for the middle of the watermelon. Place the mixture into the middle of your pan with the rind and form the shape.
7) After the rice krispie treat cools for a few minutes, you can place small chocolate chips in the meat of the watermelon to look like seeds.

This is how the rind should look before you add the middle.

Grapeseed Oil Chocolate Chip Walnut Cookies

Lately I have been craving sweets like crazy. I think this has a lot to do with the fact that I'm stressed out because I need to choose which Grad School I would like to attend in the fall. After my trip to San Francisco yesterday to tour one of the schools I may be attending I came home not feeling to excited about the school so today when I woke up I decided to bake :)

Normally when I bake cookies I use the Neiman Marcus Cookie recipe but today thanks to Pinterest and the website "Cookies and Cups" I decided to bake Grapeseed Oil Chocolate Chip Cookies. I tweeked the recipe a little bit since I wanted a smaller batch with walnuts. Without further ado, I give you Grapeseed Oil Chocolate Chip Walnut Cookies.


Ingredients:

  • 1/2 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 Tbsp vanilla
  • 1/4 + 1/8 cup of grapeseed oil
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 1/4 cups flour
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts

Directions: 
  1. Preheat oven to 375 F
  2. Line baking sheet with parchment paper
  3. In bowl of stand mixer combine both sugars, eggs and vanilla. Beat for 2 minutes on medium until light in color.
  4. Turn mixer to low and add in grapeseed oil. Beat until evenly combined.
  5. With mixer on low add in baking soda, salt and flour. Stir until evenly combined.
  6. Fold in chocolate chips and walnuts.
  7. Drop heaping tablespoon sized portions of dough onto prepared baking sheet 2 inches apart.
  8. Bake 9-11 minutes until edges are golden. Don't over bake.
  9. Allow to cool on baking sheet for 3 minutes and then transfer to wire rack to continue cooling.

The downside was that this box took almost 6 weeks to arrive. I just received it in the mail today and decided to share what was inside. Red Velvet Cheesecake Brownies

This past week my boyfriend was working on a big project at work. He decided he wanted to bake with me, so we baked the following brownies. These turned out pretty good but as you can tell from the picture the batter and cream cheese didn't swirl together that well. 


Red Velvet Cheesecake Brownies

Ingredients:

Brownie-part:
  • 1/2 cup unsalted butter
  • 1/4 cup semi-sweet chocolate chips 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 teaspoon red food coloring
  • 2/3 cup all purpose flour
  • 1/4 teaspoon salt
Cheesecake part:
  • 8-oz cream cheese, room temperature
  • 1/3 cup sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Directions:

1) Preheat oven to 350 F. Butter the bottom and sides of a 8 inch metal baking pan. Line the pan with parchment paper then butter the parchment paper. 
2) In a small, heatproof bowl, melt butter and chocolate together. Stir until combined and very smooth. Set aside to cool for a few minutes.
3) To prepare the brownie mixture: In a large bowl, whisk together the sugar, eggs, vanilla extract and red food coloring. Add chocolate mixture and stir until smooth. Add flour and salt and stir until combined.
4) To prepare cheesecake mixture, beat cream cheese, sugar, egg and vanilla extract in a medium bowl until smooth. 
5) Pour the brownie mixture into the prepared pan and spread it into an even layer. The distribute the cheesecake mixture in 8 dollops over the batter in the pan. Swirl the mixture together with a knife.
6) Bake the brownie for 35-40 minutes. When a knife is inserted into the cheesecake mixture it should come out clean. The edges of the brownies will be lightly browned. Let the brownies cool completely before removing them from the pan.

Peanut Butter Chocolate Candy

My boyfriends father loves these peanut butter and chocolate candies. He has been asking me to make him some for awhile now. As a surprise for him, since Father's Day is so close, I decided to make a batch and bring them over. He loved it. 

Ingredients 

1.5 cups confectioners’ sugar        
1.5 cups creamy peanut butter
3 tablespoons butter
1 teaspoon vanilla extract
3 cups semisweet chocolate chips

Directions

1. Line a baking sheet with parchment paper.
2. Place the peanut butter and butter In a microwave-safe bowl and microwave until the butter melts (about 30 seconds.) Take the bowl out of the microwave, add the vanilla and stir. Add the powdered sugar to the mixture and stir with a spatula until the ingredients are well blended. The mixture should look dough-like.
3. Chill the dough for at least 1 hour then roll the dough into 1-inch balls. Chill once more for at least 20 minutes. (This makes them easier to dip)



3. In a second microwave-safe bowl melt the chocolate chips. Once the chocolate is melted dip the chilled peanut butter dough in until the dough is coated. Repeat the process with the remaining balls.
4. Cover loosely with plastic wrap and refrigerate for at least 2 hours or overnight. Then enjoy!
